Cream of Mushroom Soup Shots
This soup is warm and creamy goodness in a bowl or served in tall shot glasses.

Ingredients
- ½ stick Butter (omit if you want this to be vegan)
- ¼ cup Olive Oil
- 1 Onion (diced)
- 2 cloves Garlic
- 2 lbs Mushrooms (washed and sliced - use whatever mushrooms that you like)
- 2 qts Vegetable Stock
- 1 tsp Salt
- 1 tsp White Pepper (or black if you prefer)
- 1 sprig Fresh Tarragon (optional)
Instructions
- Sauté Butter, Olive Oil, Onion and Garlic.
- When onions are soft add Mushrooms and sauté for 3-5 minutes.
- Add Vegetable Stock, Salt, White Pepper and Tarragon (at your option).
- Puree and adjust thickness with a little more liquid if needed or continue to cook to thicken if needed. Salt and pepper to adjust taste.
