Cream of Mushroom Soup Shots

This soup is warm and creamy goodness in a bowl or served in tall shot glasses.

Cook Time 20 minutes

Ingredients
  

  • ½ stick Butter (omit if you want this to be vegan)
  • ¼ cup Olive Oil
  • 1 Onion (diced)
  • 2 cloves Garlic
  • 2 lbs Mushrooms (washed and sliced - use whatever mushrooms that you like)
  • 2 qts Vegetable Stock
  • 1 tsp Salt
  • 1 tsp White Pepper (or black if you prefer)
  • 1 sprig Fresh Tarragon (optional)

Instructions
 

  • Sauté Butter, Olive Oil, Onion and Garlic.
  • When onions are soft add Mushrooms and sauté for 3-5 minutes.
  • Add Vegetable Stock, Salt, White Pepper and Tarragon (at your option).
  • Puree and adjust thickness with a little more liquid if needed or continue to cook to thicken if needed. Salt and pepper to adjust taste.
