Southern Mud Pie

This is my take on a classic mud pie - a true chocolate lover's delight.

Ingredients
  

Pie Crust

  • 2 cups Chocolate Thin Wafers
  • 1 stick Melted Butter

Filling

  • 8 oz Dark Unsweetened Chocolate
  • ½ stick Butter
  • 3 Eggs
  • ¼ cup Light Corn Syrup
  • 2 tbsp Pure Vanilla Extract
  • ¼ cup Sugar
  • ½ cup Softened Creamy Peanut Butter
  • ¼ cup Chopped Roasted Salted Peanuts
  • ¼ cup Chopped Pecans

Instructions
 

Pie Crust

  • In processor mix together Chocolate Thin Wafers and Melted Butter. Line pie plate with chocolate crust.

Filling

  • Melt Chocolate and Butter.
  • In a separate bowl beat 3 eggs. Add Corn Syrup, Vanilla and Sugar.
  • Add egg mixture to melted chocolate. Fold in Peanut Butter and Roasted Salted Peanuts.

Cook

  • Pour batter into chocolate pie crust. Bake 350℉ oven for about 40 minutes or until pie is set and a crunchy brownie-like top forms on pie.
  • Refrigerate at least 2 hours before slicing. Serve with dollop of whipped cream and a little shaved chocolate bar.
