Chilled Crab in Cucumber Cups

This is a perfect and elegant hors d'oeuvre served with chilled champagne. What a great way to start a beautiful wedding reception or fancy cocktail party.

Ingredients
  

  • 2 lbs Jumbo Lump Crab
  • Zest & Juice of One Lemon
  • ¼ cup Finely Diced Celery
  • ½ tsp Onion Powder
  • 1 tsp Old Bay Seasoning
  • ½ cup Hellmann's Mayonnaise
  • 2-3 English Cucumbers
  • Salt (to lightly sprinkle cucumber cups)
  • Small Parsley Leaves (to garnish)

Instructions
 

  • Clean and check Jumbo Lump Crab for shell pieces.
  • Place crab in a mixing bowl and add Lemon Zest, Lemon Juice, Celery, Onion Powder and Old Bay Seasoning. Gently toss to coat being careful not to break the crab too much.
  • Add Mayonnaise and gently toss to blend. Chill until ready to use.
  • Wash and dry (do not peel) English Cucumbers. Cut into 1-inch thick slices.
  • With a grapefruit spoon (which is slightly pointed and often serrated) or a melon scoop remove center of cucumber slices making sure not to cut all the way through the bottom creating little cucumber cups.
  • Very lightly sprinkle prepared cucumber cups with Salt.
  • Place a spoonful of chilled crab salad into cups. Garnish with a small parsley leaf and place on a serving platter.
