Chilled Crab in Cucumber Cups
This is a perfect and elegant hors d'oeuvre served with chilled champagne. What a great way to start a beautiful wedding reception or fancy cocktail party.

Ingredients
- 2 lbs Jumbo Lump Crab
- Zest & Juice of One Lemon
- ¼ cup Finely Diced Celery
- ½ tsp Onion Powder
- 1 tsp Old Bay Seasoning
- ½ cup Hellmann's Mayonnaise
- 2-3 English Cucumbers
- Salt (to lightly sprinkle cucumber cups)
- Small Parsley Leaves (to garnish)
Instructions
- Clean and check Jumbo Lump Crab for shell pieces.
- Place crab in a mixing bowl and add Lemon Zest, Lemon Juice, Celery, Onion Powder and Old Bay Seasoning. Gently toss to coat being careful not to break the crab too much.
- Add Mayonnaise and gently toss to blend. Chill until ready to use.
- Wash and dry (do not peel) English Cucumbers. Cut into 1-inch thick slices.
- With a grapefruit spoon (which is slightly pointed and often serrated) or a melon scoop remove center of cucumber slices making sure not to cut all the way through the bottom creating little cucumber cups.
- Very lightly sprinkle prepared cucumber cups with Salt.
- Place a spoonful of chilled crab salad into cups. Garnish with a small parsley leaf and place on a serving platter.
