Chilled Crab in Cucumber Cups
This is a perfect and elegant hors d'oeuvre served with chilled champagne. What a great way to start a beautiful wedding reception or fancy cocktail party.

- 2 lbs Jumbo Lump Crab
- Zest & Juice of One Lemon
- ¼ cup Finely Diced Celery
- ½ tsp Onion Powder
- 1 tsp Old Bay Seasoning
- ½ cup Hellmann's Mayonnaise
- 2-3 English Cucumbers
- Salt (to lightly sprinkle cucumber cups)
- Small Parsley Leaves (to garnish)
Clean and check Jumbo Lump Crab for shell pieces.
Place crab in a mixing bowl and add Lemon Zest, Lemon Juice, Celery, Onion Powder and Old Bay Seasoning. Gently toss to coat being careful not to break the crab too much.
Add Mayonnaise and gently toss to blend. Chill until ready to use.
Wash and dry (do not peel) English Cucumbers. Cut into 1-inch thick slices.
With a grapefruit spoon (which is slightly pointed and often serrated) or a melon scoop remove center of cucumber slices making sure not to cut all the way through the bottom creating little cucumber cups.
Very lightly sprinkle prepared cucumber cups with Salt.
Place a spoonful of chilled crab salad into cups. Garnish with a small parsley leaf and place on a serving platter.
