Hearty Chicken Rice Soup
This is a quick and very easy comfort soup for any cold day.To make this quick and easy use a good low sodium chicken stock (or make your own) and a store-bought rotisserie chicken.

Ingredients
- ¼ cup Olive Oil
- 1 Small Diced Onion
- 4 stalks Small Diced Celery
- 2 Diced Carrots
- ½ cup Raw Basmati Rice
- ¼ cup Raw Wild Rice
- 1½ cups Water
- 1 tsp Salt
- ½ tsp Black Pepper
- 6 cups Chicken Stock
- 1 Rotisserie Chicken (removed skin and cut into bite-size pieces)
Instructions
- In a large saucepan place Olive Oil, Onion, Celery and Carrots. Cook until onions are soft and translucent.
- Add Raw Basmati Rice and Raw Wild Rice. Toss to coat and cook for 2 minutes.
- Add Water, Salt, Black Pepper and Chicken Stock. Bring to a boil then simmer until carrots and celery are tender and rice is done.
- Add Rotisserie Chicken pieces. Taste and adjust seasoning.
- Serve with a squeeze of fresh lime or lemon and a little grated cheese.
