Hearty Chicken Rice Soup

This is a quick and very easy comfort soup for any cold day.
To make this quick and easy use a good low sodium chicken stock (or make your own) and a store-bought rotisserie chicken.

Ingredients
  

  • ¼ cup Olive Oil
  • 1 Small Diced Onion
  • 4 stalks Small Diced Celery
  • 2 Diced Carrots
  • ½ cup Raw Basmati Rice
  • ¼ cup Raw Wild Rice
  • cups Water
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 6 cups Chicken Stock
  • 1 Rotisserie Chicken (removed skin and cut into bite-size pieces)

Instructions
 

  • In a large saucepan place Olive Oil, Onion, Celery and Carrots. Cook until onions are soft and translucent.
  • Add Raw Basmati Rice and Raw Wild Rice. Toss to coat and cook for 2 minutes.
  • Add Water, Salt, Black Pepper and Chicken Stock. Bring to a boil then simmer until carrots and celery are tender and rice is done.
  • Add Rotisserie Chicken pieces. Taste and adjust seasoning.
  • Serve with a squeeze of fresh lime or lemon and a little grated cheese.
