Hearty Chicken Rice Soup
This is a quick and very easy comfort soup for any cold day.
To make this quick and easy use a good low sodium chicken stock (or make your own) and a store-bought rotisserie chicken.

Small Diced Onion

Small Diced Celery

Diced Carrots

Raw Basmati Rice

Raw Wild Rice

Chicken Stock

Rotisserie Chicken
(removed skin and cut into bite-size pieces)
Instructions
In a large saucepan place Olive Oil, Onion, Celery and Carrots. Cook until onions are soft and translucent.
Add Raw Basmati Rice and Raw Wild Rice. Toss to coat and cook for 2 minutes.
Add Water, Salt, Black Pepper and Chicken Stock. Bring to a boil then simmer until carrots and celery are tender and rice is done.
Add Rotisserie Chicken pieces. Taste and adjust seasoning.
Serve with a squeeze of fresh lime or lemon and a little grated cheese.
