Ingredients
Italian Garden Salad
- 1 head Romaine
- 1 head Bibb
- 1 head Radicchio
- Pitted Black Olives (as much or as little as you like)
- Sliced Cucumber (as much or as little as you like)
- Grape Tomatoes (as much or as little as you like)
- Sliced Radishes (as much or as little as you like)
- Thinly Sliced Red Onions (as much or as little as you like)
- Chopped Scallions (as much or as little as you like)
- Cannelloni Beans or Chickpeas (drained and rinsed; as much or as little as you like)
- Sliced Red Peppers (as much or as little as you like)
- Sliced Green Peppers (as much or as little as you like)
- Fresh Basil Chiffonade (as much or as little as you like)
Basil Vinaigrette
- ½ cup Olive Oil
- ¼ cup White Balsamic Vinegar
- 1 clove Garlic
- ½ tsp Sugar
- ½ tsp Salt
- ½ tsp Black Pepper
- ¼ cup Fresh Basil
Instructions
Italian Garden Salad
- Wash and dry Romaine, Bibb and Radicchio and tear into pieces and place in a serving bowl or platter.
- Add as much or as little as you like of Pitted Black Olives, Cucumber, Grape Tomatoes, Sliced Radishes, Red Onions, Scallions, Cannelloni Beans, Red Peppers, Green Peppers and Fresh Basil Chiffonade.
Basil Vinaigrette
- In processor place Olive Oil, White Balsamic Vinegar, Garlic, Sugar, Salt, Black Pepper and Fresh Basil and run until smooth vinaigrette is achieved.
- Toss salad with vinaigrette and serve.
