Cauliflower & Apple Gratin

Ingredients
  

  • 1 head Cauliflower (washed and sliced into pieces)
  • 4-6 Apples (peeled, washed, cored and cut into chunks)
  • Zest & Juice of One Lemon
  • ½ tsp Salt
  • 1 tsp Sugar
  • ¼ tsp Black Pepper
  • 1 tsp Onion Powder
  • Butter (for baking dish)
  • Breadcrumb (for baking dish)
  • Olive Oil (a drizzle)
  • 2-3 tbsp Butter (cut into pieces)
  • ¼ cup Grated Gruyere Cheese (optional)

Instructions
 

  • Place sliced Cauliflower in pot of salted boiling water - turn off heat - cover and let stand for 10 minutes then drain cauliflower.
  • Place cauliflower and apples in bowl and add Lemon Zest, Lemon Juice, Salt, Sugar, Black Pepper and Onion Powder. Toss well.
  • Butter and breadcrumb a baking or casserole dish. Line dish with cauliflower slices and apple slices alternating and overlapping in a circular direction.
  • Drizzle with a little olive oil and sprinkle Grated Gruyere Cheese (optional) on top.
  • Bake in a 350℉ oven for 30-40 minutes or until golden brown and bubbly.
