Cauliflower & Apple Gratin

Ingredients
- 1 head Cauliflower (washed and sliced into pieces)
- 4-6 Apples (peeled, washed, cored and cut into chunks)
- Zest & Juice of One Lemon
- ½ tsp Salt
- 1 tsp Sugar
- ¼ tsp Black Pepper
- 1 tsp Onion Powder
- Butter (for baking dish)
- Breadcrumb (for baking dish)
- Olive Oil (a drizzle)
- 2-3 tbsp Butter (cut into pieces)
- ¼ cup Grated Gruyere Cheese (optional)
Instructions
- Place sliced Cauliflower in pot of salted boiling water - turn off heat - cover and let stand for 10 minutes then drain cauliflower.
- Place cauliflower and apples in bowl and add Lemon Zest, Lemon Juice, Salt, Sugar, Black Pepper and Onion Powder. Toss well.
- Butter and breadcrumb a baking or casserole dish. Line dish with cauliflower slices and apple slices alternating and overlapping in a circular direction.
- Drizzle with a little olive oil and sprinkle Grated Gruyere Cheese (optional) on top.
- Bake in a 350℉ oven for 30-40 minutes or until golden brown and bubbly.
