Sausage in Beer Marinade
This is a terrific appetizer/hors d’oeuvre but can also make a splendid entrée served with a warm sauerkraut side. Even though this is really a German-style dish I use sweet Italian sausage and it is great. Of course, you can use a bratwurst or some other sausage.

- 5 lbs Sweet Italian Sausage
- 1 can Beer
- Water (enough to cover sausages)
- 3 cloves Garlic
- ½ tsp Black Pepper
Marinade
- 2 Pureed Onions
- 2 cloves Minced Garlic
- ½ tsp Salt
- 2 tbsp Sugar
- 1 cup Additional Beer
In saucepan place Sweet Italian Sausage, Beer, Water (enough to cover sausages), Garlic and Black Pepper. Bring to a boil then remove from heat and let sit for 5 minutes.
Drain and cut sausages into 1-inch chunks for hors d'oeuvres or larger for an entrée serving.
Marinade
Place cut sausages in a mixing bowl and marinate overnight in Pureed Onions, Minced Garlic, Salt, Sugar and Beer.
