Red Cabbage w/ Apples & Bacon
This is a must-have with sauerbraten. It is also great with pork chops. Omit the bacon if you have any vegetarians coming for dinner.

Ingredients
- ¼ cup Olive Oil
- 1 Finely Diced Onion
- 1 clove Minced Garlic
- ½ lb Chopped Raw Bacon
- ¼ cup Dark Brown Sugar
- 6-8 cups Shredded Red Cabbage
- 3 tbsp Apple Juice
- 2 Shredded Apples
- ½ tbsp Salt
- ¼ tbsp Black Pepper
Instructions
- Sauté Olive Oil, Onion, Garlic and Chopped Raw Bacon in deep skillet until bacon is browned (onions will also have some color).
- Add Dark Brown Sugar, Shredded Red Cabbage, Apple Juice, Shredded Apples, Salt and Black Pepper. Cook, stirring occasionally, until cabbage is tender.
