Red Cabbage w/ Apples & Bacon

This is a must-have with sauerbraten. It is also great with pork chops. Omit the bacon if you have any vegetarians coming for dinner.

Ingredients
  

  • ¼ cup Olive Oil
  • 1 Finely Diced Onion
  • 1 clove Minced Garlic
  • ½ lb Chopped Raw Bacon
  • ¼ cup Dark Brown Sugar
  • 6-8 cups Shredded Red Cabbage
  • 3 tbsp Apple Juice
  • 2 Shredded Apples
  • ½ tbsp Salt
  • ¼ tbsp Black Pepper

Instructions
 

  • Sauté Olive Oil, Onion, Garlic and Chopped Raw Bacon in deep skillet until bacon is browned (onions will also have some color).
  • Add Dark Brown Sugar, Shredded Red Cabbage, Apple Juice, Shredded Apples, Salt and Black Pepper. Cook, stirring occasionally, until cabbage is tender.
