Potato Dumplings

The other necessary side to sauerbraten.

Ingredients
  

  • 5 lbs Yukon Gold Potatoes (peeled, rinsed and cut into chunks)
  • 1 tsp Salt
  • 1 stick Butter
  • 1 cup Flour
  • 2 tbsp Dried Parsley Flakes
  • ½ tsp Additional Salt
  • ½ tsp Black Pepper
  • 2 Eggs Beaten
  • ½ cup Breadcrumbs
  • Brown Gravy (prepared separately in Sauerbraten recipe)

Instructions
 

  • Place potatoes in pot and cover with cold water and Salt. Bring to a boil and remove from heat. Drain and place in ricer or food mill.
  • Put milled potatoes in mixing bowl and add Butter, Flour, Dried Parsley Flakes, Salt, Black Pepper and Beaten Eggs. Blend well.
  • Form into balls and gently place balls into pot of boiling water and cook until balls float to top.
  • Serve with extra butter and brown gravy.
