Potato Dumplings

Ingredients
- 5 lbs Yukon Gold Potatoes (peeled, rinsed and cut into chunks)
- 1 tsp Salt
- 1 stick Butter
- 1 cup Flour
- 2 tbsp Dried Parsley Flakes
- ½ tsp Additional Salt
- ½ tsp Black Pepper
- 2 Eggs Beaten
- ½ cup Breadcrumbs
- Brown Gravy (prepared separately in Sauerbraten recipe)
Instructions
- Place potatoes in pot and cover with cold water and Salt. Bring to a boil and remove from heat. Drain and place in ricer or food mill.
- Put milled potatoes in mixing bowl and add Butter, Flour, Dried Parsley Flakes, Salt, Black Pepper and Beaten Eggs. Blend well.
- Form into balls and gently place balls into pot of boiling water and cook until balls float to top.
- Serve with extra butter and brown gravy.
