German Potato Salad

My grandmother used to make something very similar – little did we know it was really German potato salad.

Total Time 30 minutes
Course Buffet, Dinner, Side Dish
Servings 8

Ingredients
  

  • 5 lbs Yukon Gold Potatoes (peeled and cut into large chunks)
  • 2 Finely Diced Onions
  • 2 cloves Minced Garlic
  • ½ lb Diced Raw Bacon
  • ½ cup White Vinegar
  • ¼ cup Sugar
  • Salt & Pepper (to taste)
  • ½ cup Fresh Chopped Flat Leaf Parsley

Instructions
 

  • Boil Potatoes in salted water until potatoes are fork tender. Drain potatoes and keep warm.
  • In sauté pan cook Onions, Garlic and Diced Raw Bacon until bacon is crispy and onions are soft.
  • Pour onion, garlic and bacon over warm potatoes and gently toss.
  • Add White Vinegar and Sugar. Salt & Pepper to taste. Toss well then add Fresh Chopped Flat Leaf Parsley.
  • Serve warm or room temperature.
