German Potato Salad
My grandmother used to make something very similar – little did we know it was really German potato salad.

- 5 lbs Yukon Gold Potatoes (peeled and cut into large chunks)
- 2 Finely Diced Onions
- 2 cloves Minced Garlic
- ½ lb Diced Raw Bacon
- ½ cup White Vinegar
- ¼ cup Sugar
- Salt & Pepper (to taste)
- ½ cup Fresh Chopped Flat Leaf Parsley
Boil Potatoes in salted water until potatoes are fork tender. Drain potatoes and keep warm.
In sauté pan cook Onions, Garlic and Diced Raw Bacon until bacon is crispy and onions are soft.
Pour onion, garlic and bacon over warm potatoes and gently toss.
Add White Vinegar and Sugar. Salt & Pepper to taste. Toss well then add Fresh Chopped Flat Leaf Parsley.
Serve warm or room temperature.
