Royal Chicken Canapés

This is a delicious and elegant hors d'oeuvre that will make any cocktail party a jackpot.

Ingredients
  

  • 1-2 lbs Chicken Breast (cleaned, trimmed and diced into small cubes)
  • 3 tbsp Olive OIl
  • 3 tbsp Butter
  • 1 Finely Diced Shallot
  • 3 tbsp Flour
  • ½ cup White Wine
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • ¼ tsp Dry Mustard
  • ¼ tsp Turmeric
  • 1 cup Heavy Cream
  • ½ lb Green Seedless Grapes (cut into quarters or halves)
  • Mini Phyllo Cups (readily available in many supermarkets)

Instructions
 

  • In sauté pan place Olive Oil, Butter and Shallot.
  • When shallots are soft add Chicken. Sauté until chicken is white and almost cooked through. Do not let brown.
  • Add Flour, stir to blend, cook for one minute then add White Wine, Salt, Black Pepper, Dry Mustard and Turmeric.
  • When sauce thickens add Heavy Cream and Green Seedless Grapes. When sauce begins to bubble remove from heat and let rest for 5 minutes before using.
  • To serve place a spoonful of creamy chicken in a mini phyllo cup and serve.

Notes

This hors d'oeuvre can also be served room temperature or cold - your choice.
