Lamb Medallions on Lemon Toast w/ Caramelized Onions

Ingredients
Lamb
- 1 or 2 Tenderloins of Lamb
- Zest & Juice of Two Lemons
- 2 tbsp Olive Oil
- 2 cloves Minced Garlic
- ½ tsp Dried Mint
Lemon Toast
- Hearty Sliced White Bread or Sliced Potato Bread
- 1 stick Butter
- 3 tbsp Olive Oil
- 1 tbsp Onion Powder
- Zest & Juice of Two Lemons
- ½ tsp Sugar
Caramelized Onions
- 2-3 Thinly Sliced Onions
- ½ stick Butter
- 3 tbsp Olive Oil
- 1 tbsp Sugar
- 1 tsp Salt
- ½ tsp Black Pepper
Instructions
Lamb
- Clean and trim Lamb. Marinate lamb in Lemon Zest and Lemon Juice, Olive Oil, Garlic and Mint for 2 hours.
- Roast lamb in 400℉ oven for 12-15 minutes then let rest for 10 minutes.
Lemon Toast
- Use a hearty sliced white bread or sliced potato bread.
- Melt Butter, Olive Oil, Onion Powder, Lemon Zest and Lemon Juice and Sugar.
- Brush butter mixture on sliced bread and with a cookie or biscuit cutter cut into 1½" rounds (or you can make squares or triangles). Place cut bread pieces on a parchment lined baking sheet and bake in a 300℉ oven for 15-18 minutes or until breads are lightly golden. Let dry completely before storing or using.
Caramelized Onions
- Thinly slice or chop onions and place in sauté pan with Butter, Olive Oil and Sugar. When onions are browned and caramelized add Salt and Black Pepper.
Finish
- Place a slice of lamb on one lemon toast or sliced baguette and top with some caramelized onions and optional piece of goat cheese or a cheese of your choice.
Notes
Variations to Lemon Toast
To butter add herbs such as dill or parsley.
To butter add ⅛ tsp cayenne pepper.
To butter add 3 tbsp white wine.
