Mango Dumplings

Ingredients
  

Dough

  • 2 cups Flour
  • 1 tbsp Baking Powder
  • ½ tbsp Baking Soda
  • 1 pinch Salt
  • 1 cup Warm Water
  • 1 packet Yeast
  • ¼ cup Sugar
  • 2 tbsp Olive Oil

Egg Wash

  • 2 Eggs Beaten
  • 1 pinch Sugar
  • 1 pinch Salt
  • 1 drop Olive Oil

Mango Filling

  • 2 Fresh Mangoes (cut into strips or a can/jar mangoes lightly mashed)
  • Zest & Juice of One Orange
  • Zest & Juice of One Lime
  • 2 tbsp Light Brown Sugar (only is using fresh fruit)

Instructions
 

Dough

  • Sift together Flour, Baking Powder, Baking Soda and Salt and place in mixing bowl.
  • In another bowl mix together Warm Water, Yeast, Sugar and Olive Oil and let rest 5 minutes.
  • Combine flour and liquid to make dough. Cover and let rise for 1-2 hours.
  • Place on a lightly floured surface and roll to ¼-inch thick. Cut 4-inch circles.

Egg Wash

  • Mix together Beaten Eggs, Sugar, Salt and Olive Oil.

Mango Filling

  • Mix together Mangoes, Orange Zest, Orange Juice, Lime Zest, Lime Juice and Light Brown Sugar.

Assemble & Cook

  • Brush egg wash on circle and place a spoonful of filling in center of dough. Fold over and gently pinch close the edges.
  • Deep fry for 3-4 minutes or until golden brown. Drain on paper towel. Dust with confectioners' sugar and serve.
