Ingredients
Dough
- 2 cups Flour
- 1 tbsp Baking Powder
- ½ tbsp Baking Soda
- 1 pinch Salt
- 1 cup Warm Water
- 1 packet Yeast
- ¼ cup Sugar
- 2 tbsp Olive Oil
Egg Wash
- 2 Eggs Beaten
- 1 pinch Sugar
- 1 pinch Salt
- 1 drop Olive Oil
Mango Filling
- 2 Fresh Mangoes (cut into strips or a can/jar mangoes lightly mashed)
- Zest & Juice of One Orange
- Zest & Juice of One Lime
- 2 tbsp Light Brown Sugar (only is using fresh fruit)
Instructions
Dough
- Sift together Flour, Baking Powder, Baking Soda and Salt and place in mixing bowl.
- In another bowl mix together Warm Water, Yeast, Sugar and Olive Oil and let rest 5 minutes.
- Combine flour and liquid to make dough. Cover and let rise for 1-2 hours.
- Place on a lightly floured surface and roll to ¼-inch thick. Cut 4-inch circles.
Egg Wash
- Mix together Beaten Eggs, Sugar, Salt and Olive Oil.
Mango Filling
- Mix together Mangoes, Orange Zest, Orange Juice, Lime Zest, Lime Juice and Light Brown Sugar.
Assemble & Cook
- Brush egg wash on circle and place a spoonful of filling in center of dough. Fold over and gently pinch close the edges.
- Deep fry for 3-4 minutes or until golden brown. Drain on paper towel. Dust with confectioners' sugar and serve.
