Biryani Raita (Fragrant Rice w/ Coconut Milk)

This is a fragrant rice and coconut milk dish that is wonderful with any meat, fish or vegetable.

Ingredients
  

  • ¼ stick Butter
  • 3 tbsp Olive Oil
  • 1 Finely Diced Onion or Shallot (small onion)
  • 2 cups Basmati Rice
  • 2 cups Water
  • 2 cups Coconut Milk
  • 1 tbsp Salt
  • ½ tsp Cumin
  • ½ tsp Coriander

Instructions
 

  • In saucepan place Butter, Olive Oil, and Onion (or shallot). Cook until onion is soft and translucent (do not let brown).
  • Add Basmati Rice and stir rice to coat and cook 2 minutes - also do not let brown.
  • Add Water, Coconut Milk, Salt, Cumin and Coriander. Lower heat to a simmer. Cover and let rice cook until all liquid is absorbed. Fluff with a fork and serve.
