Tomato-Basil Soup

This is a wonderful soup that is full of flavor but not heavy.

Ingredients
  

  • ½ cup Olive Oil
  • 2 Diced Onions (large onions)
  • 4 cloves Minced Garlic
  • 4 cans Italian Plum Tomatoes (large cans)
  • 4 cups Vegetable Stock (you can use chicken stock if you don't have any vegetarians)
  • 1 cup Chopped Fresh Basil (1 large bunch)
  • 1 tbsp Salt
  • ½ tbsp Crushed Black Pepper
  • 1 tbsp Sugar

Instructions
 

  • Sauté Olive Oil, Onions and Garlic for 3-5 minutes. Onions should be soft and translucent - not browned at all.
  • Add Italian Plum Tomatoes, Vegetable Stock, Fresh Basil, Salt, Crushed Black Pepper and Sugar. Simmer 1-2 hours.
  • Serve chunky with crusty bread and salad or puree with a hand blender to desired smoothness.
