Tomatillo Salsa
Tomatillos are small green tomato-shaped fruits that are great to make salsas. They come in a leafy paper casing that must be removed. This versatile sauce is a must have when serving grilled chicken or fish not just for Mexican cuisine.

Ingredients
- 6-8 Tomatillos
- Zest & Juice of Two Limes
- 1 Rough Chopped Onion (medium onion)
- 1 clove Garlic
- 3 tbsp Olive Oil
- 1 tsp Salt
- ½ tsp Black Pepper
- ¼ cup Fresh Cilantro
- 2 Jalapeño Peppers (use seeds to achieve desired heat)
Instructions
- Rinse, dry and cut Tomatillos. Place in the bowl of a food processor or blender.
- Add all ingredients to the bowl and run processor or blender until desired chunkiness is achieved. Chill until ready to use.
