Refried Beans
Make your own. It is so easy and a great way to control the sodium.

Ingredients
- 2 cans Red Kidney Beans (large cans)
- ¼ cup Olive Oil
- 2 Finely Diced Onions
- 1 Finely Diced Green Pepper
- 3 cloves Minced Garlic
- ¼ cup Chopped Cilantro
- ½ tsp Dried Oregano
- ½ tsp Salt
- ½ tsp Black Pepper
- 1 tbsp Hot Sauce
- 1 Diced Jalapeño (optional)
Instructions
- If using dried beans soak overnight in cold water - rinse - bring to a boil with fresh water and simmer for 1 hour. Drain again and rinse. DO NOT SALT beans while cooking as it will only make them tough.
- For canned beans, drain and rinse Red Kidney Beans.
- In sauté pan place Olive Oil, Onions, Green Pepper and Garlic.
- When onions are soft add Beans, Cilantro, Dried Oregano, Salt, Black Pepper, Hot Sauce and optional Jalapeño.
- Simmer for 30 minutes. With potato masher mash most of the beans to a paste - leave some texture for interest.
