Refried Beans

Make your own. It is so easy and a great way to control the sodium.

Ingredients
  

  • 2 cans Red Kidney Beans (large cans)
  • ¼ cup Olive Oil
  • 2 Finely Diced Onions
  • 1 Finely Diced Green Pepper
  • 3 cloves Minced Garlic
  • ¼ cup Chopped Cilantro
  • ½ tsp Dried Oregano
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • 1 tbsp Hot Sauce
  • 1 Diced Jalapeño (optional)

Instructions
 

  • If using dried beans soak overnight in cold water - rinse - bring to a boil with fresh water and simmer for 1 hour. Drain again and rinse. DO NOT SALT beans while cooking as it will only make them tough.
  • For canned beans, drain and rinse Red Kidney Beans.
  • In sauté pan place Olive Oil, Onions, Green Pepper and Garlic.
  • When onions are soft add Beans, Cilantro, Dried Oregano, Salt, Black Pepper, Hot Sauce and optional Jalapeño.
  • Simmer for 30 minutes. With potato masher mash most of the beans to a paste - leave some texture for interest.
