Lemon Bars

This recipe is a true lemon lover's dessert that my cousin Lucy gave me.

Cook Time 50 minutes
Cooling Time 20 minutes
Total Time 1 hour 30 minutes

Ingredients
  

Cookie Crust

  • 2 sticks Butter
  • ½ cup Confectioners' Sugar
  • 1 tbsp Lemon Extract
  • 2 cups Flour
  • ½ cup Finely Chopped Almonds (pulse in food processor or grinder)

Lemon Curd Filling

  • 2 sticks Butter
  • 1 cup Sugar
  • 1 cup Lemon Juice
  • Zest of Two Lemons
  • 1 pinch Salt
  • 6 Eggs
  • 4 tbsp Flour

Serve

  • Additional Confectioners' Sugar (for dusting)

Instructions
 

Cookie Crust

  • Cream Butter, Confectioners' Sugar and Lemon Extract.
  • Add Flour and Chopped Almonds.
  • Dough should be a little crumbly. Press cookie dough in buttered or sprayed 9x13 baking pan and bake in 350℉ oven for 15-20 minutes or until lightly golden.

Lemon Curd Filling

  • In mixer cream Butter, Sugar, Lemon Juice, Lemon Zest and Salt.
  • Add Eggs and Flour. Blend well.

Cook

  • Pour over baked cookie crust. Bake in 350℉ oven for approximately 25-30 minutes or until edges begin to brown.
  • Let cool to set, dust with Additional Confectioners' Sugar and cut into desired sizes and enjoy.
