Lemon Bars
This recipe is a true lemon lover's dessert that my cousin Lucy gave me.

Ingredients
Cookie Crust
- 2 sticks Butter
- ½ cup Confectioners' Sugar
- 1 tbsp Lemon Extract
- 2 cups Flour
- ½ cup Finely Chopped Almonds (pulse in food processor or grinder)
Lemon Curd Filling
- 2 sticks Butter
- 1 cup Sugar
- 1 cup Lemon Juice
- Zest of Two Lemons
- 1 pinch Salt
- 6 Eggs
- 4 tbsp Flour
Serve
- Additional Confectioners' Sugar (for dusting)
Instructions
Cookie Crust
- Cream Butter, Confectioners' Sugar and Lemon Extract.
- Add Flour and Chopped Almonds.
- Dough should be a little crumbly. Press cookie dough in buttered or sprayed 9x13 baking pan and bake in 350℉ oven for 15-20 minutes or until lightly golden.
Lemon Curd Filling
- In mixer cream Butter, Sugar, Lemon Juice, Lemon Zest and Salt.
- Add Eggs and Flour. Blend well.
Cook
- Pour over baked cookie crust. Bake in 350℉ oven for approximately 25-30 minutes or until edges begin to brown.
- Let cool to set, dust with Additional Confectioners' Sugar and cut into desired sizes and enjoy.
