Tropical Rice w/ Pineapple - Red Onion - Almonds

What a perfect side dish to the Hawaiian Pork Roast. This festive and colorful rice dish turns any meal into a party.

Ingredients
  

  • 6 cups Cooked White Rice (prepared separately; you can also use brown rice for a nuttier twist)
  • 1 cup Pineapple Chunks
  • ½ cup Diced Red Pepper
  • ½ cup Macadamia Nuts
  • ¼ ccup Peas
  • 2 tbsp Chopped Pickled Ginger
  • 2 tbsp Chopped Chives

Instructions
 

  • Prepare White Rice and add Pineapple, Red Pepper, Macadamia Nuts, Peas, Pickled Ginger and Chives. Mix together and serve.

Notes

This can also be served room temperature or cold as a summer side dish.
