Beef Stew

Ingredients
Flour Meat
- 2 lbs Rib Roast or Bottom Round (cut into 2" cubes)
- 1 cup Flour
- 1 tbsp Salt
- 1 tsp Black Pepper
Stew
- ½ lb Chopped Bacon
- 2 Large Diced Onions
- 3 cloves Minced Garlic
- 2-3 Large Potatoes (cut into 2" cubes)
- 1 Diced Green Pepper
- 1 Diced Red Pepper
- 3 Sliced Carrots
- 2 cups Beef Stock
- 2 cups Red Wine
- ½ cup Water
- 1 tsp Salt
- ½ tsp Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 cups Frozen Peas
- 1 cup Frozen Corn (optional)
Instructions
Flour Meat
- Toss Rib Roast (or Bottom Round) with Flour, Salt, and Black Pepper.
Stew
- In a large Dutch oven or oven proof baking dish with a lid sauté Bacon, Onions and Garlic until Onions are just tender.
- Add floured meat to pan and toss to brown for about 3-5 minutes. Add Potatoes, Green Pepper, Red Pepper, Carrots, Beef Stock, Red Wine, Water, Salt, Black Pepper, Onion Powder, Garlic Powder.
- Cover and place in a 300℉ oven for 3 hours or until meat is fork tender.
- Add Frozen Peas and Corn (optional). Stir to blend and let rest covered for 10 minutes before serving.
