Beef Stew

A super easy one pot stew with great flavor.

Ingredients
  

Flour Meat

  • 2 lbs Rib Roast or Bottom Round (cut into 2" cubes)
  • 1 cup Flour
  • 1 tbsp Salt
  • 1 tsp Black Pepper

Stew

  • ½ lb Chopped Bacon
  • 2 Large Diced Onions
  • 3 cloves Minced Garlic
  • 2-3 Large Potatoes (cut into 2" cubes)
  • 1 Diced Green Pepper
  • 1 Diced Red Pepper
  • 3 Sliced Carrots
  • 2 cups Beef Stock
  • 2 cups Red Wine
  • ½ cup Water
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 cups Frozen Peas
  • 1 cup Frozen Corn (optional)

Instructions
 

Flour Meat

  • Toss Rib Roast (or Bottom Round) with Flour, Salt, and Black Pepper.

Stew

  • In a large Dutch oven or oven proof baking dish with a lid sauté Bacon, Onions and Garlic until Onions are just tender.
  • Add floured meat to pan and toss to brown for about 3-5 minutes. Add Potatoes, Green Pepper, Red Pepper, Carrots, Beef Stock, Red Wine, Water, Salt, Black Pepper, Onion Powder, Garlic Powder.
  • Cover and place in a 300℉ oven for 3 hours or until meat is fork tender.
  • Add Frozen Peas and Corn (optional). Stir to blend and let rest covered for 10 minutes before serving.
