Ingredients
- 2-3 Yellow Squash (washed, peeled and cut into ¼" rounds)
- 2-3 Zucchini (washed, peeled and cut into ¼" rounds)
- 2 Diced Onions
- ¼ cup Olive Oil
- 1 tbsp Salt
- ½ tbsp Crushed Black Pepper
- 2 cloves Crushed Garlic
Instructions
- Place Yellow Squash, Zucchini, Onions, Olive Oil, Salt, Black Pepper and Garlic in a roasting pan and roast in a 400℉ oven for 25-30 minutes or until vegetables are softened and onion is slightly caramelized.
- Taste and adjust salt and pepper.
