Roasted Fine-Herb Potatoes
I like to use fingerling potatoes for this dish but you can use just about any potato you like.

Ingredients
- 5 lbs Fingerling Potatoes
- ¼ cup Olive Oil
- ½ tbsp Salt
- ½ tbsp Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 2 tbsp Parsley Flakes
- 2 tbsp Dried Dill Weed
- 1 tbsp Dried Tarragon
- ½ tsp Dried Rosemary
- ½ tbsp Sugar
Instructions
- Wash, dry and cut in half lengthwise Fingerling Potatoes. Place in mixing bowl.
- Add Olive Oil, Salt, Black Pepper, Onion Powder, Garlic Powder, Parsley Flakes, Dill Weed, Tarragon, Rosemary and Sugar and toss to coat.
- Place seasoned potatoes in baking dish and roast in a 400℉ oven for 30 minutes or until potatoes are golden brown but soft and fluffy inside.
