Roasted Fine-Herb Potatoes

I like to use fingerling potatoes for this dish but you can use just about any potato you like.

Cook Time 30 minutes
Total Time 35 minutes

Ingredients
  

  • 5 lbs Fingerling Potatoes
  • ¼ cup Olive Oil
  • ½ tbsp Salt
  • ½ tbsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 2 tbsp Parsley Flakes
  • 2 tbsp Dried Dill Weed
  • 1 tbsp Dried Tarragon
  • ½ tsp Dried Rosemary
  • ½ tbsp Sugar

Instructions
 

  • Wash, dry and cut in half lengthwise Fingerling Potatoes. Place in mixing bowl.
  • Add Olive Oil, Salt, Black Pepper, Onion Powder, Garlic Powder, Parsley Flakes, Dill Weed, Tarragon, Rosemary and Sugar and toss to coat.
  • Place seasoned potatoes in baking dish and roast in a 400℉ oven for 30 minutes or until potatoes are golden brown but soft and fluffy inside.
