Roasted Summer Squash

Ingredients
  

  • 2-3 Yellow Squash (washed, peeled and cut into ¼" rounds)
  • 2-3 Zucchini (washed, peeled and cut into ¼" rounds)
  • 2 Diced Onions
  • ¼ cup Olive Oil
  • 1 tbsp Salt
  • ½ tbsp Crushed Black Pepper
  • 2 cloves Crushed Garlic

Instructions
 

  • Place Yellow Squash, Zucchini, Onions, Olive Oil, Salt, Black Pepper and Garlic in a roasting pan and roast in a 400℉ oven for 25-30 minutes or until vegetables are softened and onion is slightly caramelized.
  • Taste and adjust salt and pepper.
