Nutty Rice Pilaf

Ingredients
- ¼ cup Olive Oil
- 1 Diced Onion
- 2 cloves Minced Garlic
- 1 cup Orzo Pasta
- 2 cups Rice
- 5 cups Vegetable Stock (you can use chicken stock also)
- 1 tsp Salt
- ½ tsp Black Pepper
- 2 tbsp Parsley Flakes
- ½ cup Currants or Raisins (optional)
- ½ cup Cooked Chickpeas (optional)
- 1 cup Chopped Pecans (or walnuts, pignoli nuts, cashews or whatever nuts you prefer)
- Zest & Juice of One Lime
Instructions
- Sauté Olive Oil, Onion and Minced Garlic. When onions are just soft (about 3 minutes) add Orzo Pasta.
- Let pasta sauté for 3-5 minutes and let it get a little toasty and nutty brown.
- Add Rice and sauté rice for 3 minutes.
- Add Vegetable Stock, Salt, Black Pepper, Parsley Flakes, and optional currants/raisins and optional chickpeas. Cover and simmer until almost all the liquid is absorbed then add Pecans, Lime Zest and Lime Juice. Fluff with fork and serve.
