5cupsVegetable Stock(you can use chicken stock also)
1tspSalt
½tspBlack Pepper
2tbspParsley Flakes
½cupCurrants or Raisins(optional)
½cupCooked Chickpeas(optional)
1cupChopped Pecans(or walnuts, pignoli nuts, cashews or whatever nuts you prefer)
Zest & Juice of One Lime
Instructions
Sauté Olive Oil, Onion and Minced Garlic. When onions are just soft (about 3 minutes) add Orzo Pasta.
Let pasta sauté for 3-5 minutes and let it get a little toasty and nutty brown.
Add Rice and sauté rice for 3 minutes.
Add Vegetable Stock, Salt, Black Pepper, Parsley Flakes, and optional currants/raisins and optional chickpeas. Cover and simmer until almost all the liquid is absorbed then add Pecans, Lime Zest and Lime Juice. Fluff with fork and serve.
