Basic Muffin Recipe
This is a good start and you can be as creative and adventurous as you wish with add-ins. Add your favorite things and make them your own signature muffins.

Ingredients
Wet Ingredients
- 2 sticks Soft Butter
- 2 Eggs
- 1 cup Whole Milk
- 1 tsp Vanilla Extract
- 1 cup Sugar
Dry Ingredients
- 2½ cups Flour
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- ½ tsp Salt
Instructions
- In one mixing bowl cream together Butter, Eggs, Whole Milk, Vanilla Extract and Sugar.
- In another bowl whisk together Flour, Baking Powder, Baking Soda and Salt.
- Make a well in dry ingredients and add wet ingredients. Blend to incorporate. Do not over mix or you'll have tough muffins.
- Scoop finished batter into sprayed muffin tins and bake in a 350℉ oven for 15-20 minutes for mini muffins and 25-35 minutes for larger muffins until inserted toothpick comes out clean.
Notes
Variations
Cranberry Nut: At end add 1 cup dried cranberries and ¾ cup chopped pecans to batter.
Corn Muffins: Replace 1 cup of Flour with 1 cup Yellow Cornmeal.
Raisin Bran Muffin: Replace 1 cup of Flour with 1 cup Bran and add 1 tsp Cinnamon, replace ½ cup Sugar with ½ cup Brown Sugar. At end add 2 peeled and diced Apples and fold to blend.
Chocolate Chip: at end add 1 cup Semi-Sweet Chocolate Chips.
Banana Nut: Mash 2 ripe Bananas into egg mixture. At end add ¾ cup chopped Walnuts.
Blueberry: at end fold 1½ cups Blueberries.
Lemon Poppy Seed: add Zest and Juice of 1 Lemon plus 1 tsp Lemon Extract to egg mixture. At end fold in ½ cup Black Poppy Seeds.
