Black Bean Crostini

Ingredients
  

  • ¼ cup Olive Oil
  • 1 Finely Chopped Onion
  • 1 Finely Diced Green Pepper
  • 2 cloves Minced Garlic
  • ¼ cup Fresh Chopped Cilantro
  • 1 can Black Beans (large can - drained and rinsed)
  • ¼ cup Fresh Lime Juice

Instructions
 

  • Sauté Olive Oil, Onion, Green Pepper and Garlic until onions and peppers are soft.
  • Add Cilantro, Black Beans and Lime Juice.
  • In processor place half of the bean mixture and puree. Add remaining half of the bean mixture to the puree and mix together.
  • Serve warm with chip, crackers and crusty bread.

Notes

This can also be served chilled as a dip with crackers or crudités.
