Black Bean Crostini

Ingredients
- ¼ cup Olive Oil
- 1 Finely Chopped Onion
- 1 Finely Diced Green Pepper
- 2 cloves Minced Garlic
- ¼ cup Fresh Chopped Cilantro
- 1 can Black Beans (large can - drained and rinsed)
- ¼ cup Fresh Lime Juice
Instructions
- Sauté Olive Oil, Onion, Green Pepper and Garlic until onions and peppers are soft.
- Add Cilantro, Black Beans and Lime Juice.
- In processor place half of the bean mixture and puree. Add remaining half of the bean mixture to the puree and mix together.
- Serve warm with chip, crackers and crusty bread.
Notes
This can also be served chilled as a dip with crackers or crudités.
