Churchill Downs Grits Casserole

This is my version of a timeless southern staple. I prefer to use white cornmeal for this dish.

Servings 8

Ingredients
  

  • 2 cups Water
  • 2 cups Milk
  • 1 stick Butter
  • 2 cups White Cornmeal
  • 1 tbsp Salt
  • ½ tbsp Black Pepper
  • 1 tbsp Sugar
  • Shredded White Cheddar Cheese (optional)

Instructions
 

  • In a large saucepan bring to a gentle boil Water, Milk and Butter. Slowly add White Cornmeal, Salt, Black Pepper and Sugar.
  • Cook on very low heat - stirring constantly until you get a rich thick porridge-like consistency. Optional: add shredded white cheddar cheese at the end and blend to melt.
  • Serve under a hearty stew, with sausage gravy and biscuits, or a southern classic with sauteed shrimp.
