Churchill Downs Grits Casserole
This is my version of a timeless southern staple. I prefer to use white cornmeal for this dish.

Ingredients
- 2 cups Water
- 2 cups Milk
- 1 stick Butter
- 2 cups White Cornmeal
- 1 tbsp Salt
- ½ tbsp Black Pepper
- 1 tbsp Sugar
- Shredded White Cheddar Cheese (optional)
Instructions
- In a large saucepan bring to a gentle boil Water, Milk and Butter. Slowly add White Cornmeal, Salt, Black Pepper and Sugar.
- Cook on very low heat - stirring constantly until you get a rich thick porridge-like consistency. Optional: add shredded white cheddar cheese at the end and blend to melt.
- Serve under a hearty stew, with sausage gravy and biscuits, or a southern classic with sauteed shrimp.
