Ingredients
- Baby French Carrots (peeled and washed - leave a little of the green stem)
- 3 tbsp Olive Oil
- Zest & Juice of One Lemon
- ½ tsp Sugar
- 1 pinch Dried Mint
- ¼ tsp Salt
Instructions
- Toss Carrots with Olive Oil, Lemon Zest and Lemon Juice, Sugar, Mint and Salt.
- Place on sheet pan and roast in a 400℉ oven for 30 minutes until tender and carrots have a little brown color in spots.
