Haricots Verts
These thin French green beans are a lovely and elegant side to any entrée.

Ingredients
- 2 lbs Haricot Vert
- 2 tbsp Butter
- 2 tbsp Olive Oil
- 1 Finely Diced Shallot
- ¼ cup Sliced or Slivered Almonds (optional)
Instructions
- Wash Haricot Vert and trim the stem end.
- Bring a salted pot of water to a boil and add green beans. Cook for 2-3 minutes. Drain and place in ice water bath. This will stop the cooking and retain the beautiful green color. Set aside.
- In saucepan sauté Butter, Olive Oil and Shallot. Add blanched green beans and toss to heat through.
- Optionally, add Sliced or Slivered Almonds.
