Haricots Verts

These thin French green beans are a lovely and elegant side to any entrée.

Cook Time 15 minutes
Total Time 25 minutes

Ingredients
  

  • 2 lbs Haricot Vert
  • 2 tbsp Butter
  • 2 tbsp Olive Oil
  • 1 Finely Diced Shallot
  • ¼ cup Sliced or Slivered Almonds (optional)

Instructions
 

  • Wash Haricot Vert and trim the stem end.
  • Bring a salted pot of water to a boil and add green beans. Cook for 2-3 minutes. Drain and place in ice water bath. This will stop the cooking and retain the beautiful green color. Set aside.
  • In saucepan sauté Butter, Olive Oil and Shallot. Add blanched green beans and toss to heat through.
  • Optionally, add Sliced or Slivered Almonds.
