Very Veggie Soup w/ Mixed Beans

Ingredients
  

Beans

  • 1 lb. Mixed Beans

Sauté

  • 2 Diced Onions
  • 2 cloves Minced Garlic
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 Diced Zucchini
  • 1 Diced Yellow Squash

Simmer

  • 2 qts Vegetable Stock
  • 1 qt Water
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

Instructions
 

Beans

  • Soak Mixed Beans overnight in warm water. Drain and rinse. Place in pot and cover with cold water and bring to a boil and simmer for 1 hour or until beans are tender. Drain. Set aside.

Sauté

  • In a large pot sauté Onions and Garlic. When onions are soft add Carrots and Celery. Cook for 5-6 minutes and then add Zucchini and Yellow Squash.

Simmer

  • Add cooked Beans, Vegetable Stock, Water, Salt, Black Pepper, Onion Powder and Garlic Powder and simmer for 30 minutes or until heated through.
