Very Veggie Soup w/ Mixed Beans

Ingredients
Beans
- 1 lb. Mixed Beans
Sauté
- 2 Diced Onions
- 2 cloves Minced Garlic
- 1 cup Diced Carrots
- 1 cup Diced Celery
- 1 Diced Zucchini
- 1 Diced Yellow Squash
Simmer
- 2 qts Vegetable Stock
- 1 qt Water
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
Instructions
Beans
- Soak Mixed Beans overnight in warm water. Drain and rinse. Place in pot and cover with cold water and bring to a boil and simmer for 1 hour or until beans are tender. Drain. Set aside.
Sauté
- In a large pot sauté Onions and Garlic. When onions are soft add Carrots and Celery. Cook for 5-6 minutes and then add Zucchini and Yellow Squash.
Simmer
- Add cooked Beans, Vegetable Stock, Water, Salt, Black Pepper, Onion Powder and Garlic Powder and simmer for 30 minutes or until heated through.
