Ingredients
- ¼ cup Olive Oil
- Juice of One Lemon
- 3 cloves Minced Garlic
- ¼ cup Chopped Parsley
- 3 tbsp Fresh Chopped Mint
- ½ tsp Salt
- ½ tsp Crushed Black Pepper
- 1 tsp Onion Powder
- ½ cup Panko Breadcrumbs
- Zest of One Lemon
Instructions
- Mix together Olive Oil, Lemon Juice, Garlic, Parsley, Mint, Salt, Black Pepper and Onion Powder and spread all over meat.
- Mix together Panko Breadcrumbs and Lemon Zest and coat meat with breadcrumb mixture.
- Roast in a 400℉ oven until internal temp is 155℉. For leg of lamb approximately 1¼ Hours. For rack of lamb approximately 25-30 minutes. For tenderloin of lamb approximately 35 minutes.
