Roast Leg of Lamb

Leg of Lamb - Rack of Lamb - Tenderloin of Lamb - whatever cut you choose this is the marinade and coating for a moist and flavorful piece of meat.

Ingredients
  

  • ¼ cup Olive Oil
  • Juice of One Lemon
  • 3 cloves Minced Garlic
  • ¼ cup Chopped Parsley
  • 3 tbsp Fresh Chopped Mint
  • ½ tsp Salt
  • ½ tsp Crushed Black Pepper
  • 1 tsp Onion Powder
  • ½ cup Panko Breadcrumbs
  • Zest of One Lemon

Instructions
 

  • Mix together Olive Oil, Lemon Juice, Garlic, Parsley, Mint, Salt, Black Pepper and Onion Powder and spread all over meat.
  • Mix together Panko Breadcrumbs and Lemon Zest and coat meat with breadcrumb mixture.
  • Roast in a 400℉ oven until internal temp is 155℉. For leg of lamb approximately 1¼ Hours. For rack of lamb approximately 25-30 minutes. For tenderloin of lamb approximately 35 minutes.
