Green Beans w/ Sautéed Onions & Mushrooms

This is a perfect side dish to many entrees and a lovely main choice for your vegetarian guests.

Ingredients
  

  • 3-4 lbs Green Beans
  • ½ stick Butter
  • 3 tbsp Olive Oil
  • 2 Finely Diced Onions
  • 1-2 cups Mushrooms of Choice

Instructions
 

  • Wash and stem Green Beans.
  • Bring a pot of salted water to a boil and add cleaned green beans. Cook for 3-4 minutes or until slightly tender. Drain and place in an ice bath to stop the cooking and to retain the rich green color.
  • In a sauté pan place Butter, Olive Oil and Onions. When onions are soft add Mushrooms. Cook for 2-3 minutes.
  • Add the cooked green beans and toss to coat. Season with salt and pepper to taste.
