Green Beans w/ Sautéed Onions & Mushrooms
This is a perfect side dish to many entrees and a lovely main choice for your vegetarian guests.

Ingredients
- 3-4 lbs Green Beans
- ½ stick Butter
- 3 tbsp Olive Oil
- 2 Finely Diced Onions
- 1-2 cups Mushrooms of Choice
Instructions
- Wash and stem Green Beans.
- Bring a pot of salted water to a boil and add cleaned green beans. Cook for 3-4 minutes or until slightly tender. Drain and place in an ice bath to stop the cooking and to retain the rich green color.
- In a sauté pan place Butter, Olive Oil and Onions. When onions are soft add Mushrooms. Cook for 2-3 minutes.
- Add the cooked green beans and toss to coat. Season with salt and pepper to taste.
