Greek Salad

This delicious salad can easily be a main course.

Ingredients
  

  • 2 heads Romain Lettuce
  • 3 Ripe Tomatoes (cut into wedges)
  • 1 Cucumber (sliced or diced)
  • 1 Thinly Sliced Red Onion
  • 1 Thinly Sliced Green Pepper
  • 1 cup Crumbled Feta Cheese
  • ½ cup Kalamata Olives (pitted is better in this recipe)
  • 3-4 tbsp Olive Oil
  • Juice of One Lemon
  • 2 tbsp Red Wine Vinegar
  • ½ tsp Dried Oregano
  • ½ tsp Salt (optional - feta & olives are salty to begin with)
  • 1 tsp Crushed Black Pepper

Instructions
 

  • Clean, dry and chop Romaine Lettuce. Place in serving bowl or serving platter and add Tomatoes, Cucumber, Red Onion, Green Pepper, Feta Cheese, Kalamata Olives, Olive Oil, Lemon Juice, Red Wine Vinegar, Oregano, optional Salt and Black Pepper. Toss right before serving.
