Pasta alla Marchesa

This pasta dish is fit for royalty.

Ingredients
  

  • 1 lb Fusilli Pasta

Alfredo Sauce

  • 1 stick Butter
  • 1 Small Onion (pureed)
  • 2 cloves Garlic (pureed with the onion)
  • ¼ cup Flour
  • 1 qt Heavy Cream
  • 2 cups Milk
  • 1 pinch Salt
  • ½ cup Shaved Parmigiano Reggiano

Finish

  • 3 tbsp Grated Pecorino Romano
  • 2 tbsp Toasted Breadcrumbs
  • ½ tsp Red Caviar (optional)
  • ½ tsp Black Caviar (optional)
  • Shaved Black Truffles (optional)

Instructions
 

  • Prepare Pasta according to directions.

Alfredo Sauce

  • Sauté Butter, Onion and garlic.
  • Add Flour and cook for 2-3 minutes but be careful not to let the roux brown.
  • Add Heavy Cream, Milk, Salt and cook until sauce thickens. Then add Parmigiano Reggiano.
  • Toss with cooked pasta and add Pecorino Romano, Breadcrumbs.
  • Plate pasta and top with either Red Caviar, Black Caviar or Shaved Black Truffles.
