Pasta alla Marchesa

Ingredients
- 1 lb Fusilli Pasta
Alfredo Sauce
- 1 stick Butter
- 1 Small Onion (pureed)
- 2 cloves Garlic (pureed with the onion)
- ¼ cup Flour
- 1 qt Heavy Cream
- 2 cups Milk
- 1 pinch Salt
- ½ cup Shaved Parmigiano Reggiano
Finish
- 3 tbsp Grated Pecorino Romano
- 2 tbsp Toasted Breadcrumbs
- ½ tsp Red Caviar (optional)
- ½ tsp Black Caviar (optional)
- Shaved Black Truffles (optional)
Instructions
- Prepare Pasta according to directions.
Alfredo Sauce
- Sauté Butter, Onion and garlic.
- Add Flour and cook for 2-3 minutes but be careful not to let the roux brown.
- Add Heavy Cream, Milk, Salt and cook until sauce thickens. Then add Parmigiano Reggiano.
- Toss with cooked pasta and add Pecorino Romano, Breadcrumbs.
- Plate pasta and top with either Red Caviar, Black Caviar or Shaved Black Truffles.
