Cream of Cauliflower Soup

Ingredients
Sauté
- ½ stick Butter (omit if you want this to be vegan)
- ¼ cup Olive Oil
- 1 Onion - diced
- 2 cloves Garlic
- 1 head Cauliflower - broken or sliced
Puree
- 2 qts Vegetable Stock
- 1 tsp Salt
- 1 tsp White Pepper (or black pepper if you prefer)
Instructions
Sauté
- Sauté Butter, Olive Oil, Onion and Garlic. When onions are soft add Cauliflower and sauté for 3-5 minutes.
Puree
- Add Vegetable Stock, Salt and White Pepper and puree. Adjust thickness with a little more liquid if needed or continue to cook to thicken if needed. Salt and Pepper to taste.
