Cream of Cauliflower Soup

Warm and creamy goodness in a bowl!

Ingredients
  

Sauté

  • ½ stick Butter (omit if you want this to be vegan)
  • ¼ cup Olive Oil
  • 1 Onion - diced
  • 2 cloves Garlic
  • 1 head Cauliflower - broken or sliced

Puree

  • 2 qts Vegetable Stock
  • 1 tsp Salt
  • 1 tsp White Pepper (or black pepper if you prefer)

Instructions
 

Sauté

  • Sauté Butter, Olive Oil, Onion and Garlic. When onions are soft add Cauliflower and sauté for 3-5 minutes.

Puree

  • Add Vegetable Stock, Salt and White Pepper and puree. Adjust thickness with a little more liquid if needed or continue to cook to thicken if needed. Salt and Pepper to taste.
