Fettuccini Alfredo w/ Shaved Parmesan

This creamy rich sauce is the star of Fettuccini Alfredo but can be used in so many ways. Try it on chicken or in a casserole. It is basically a béchamel sauce with a little garlic and grated cheese.

Ingredients
  

  • 1 stick Butter
  • 1 Small Onion - pureed
  • 2 cloves Garlic (pureed with the onion)
  • ¼ cup Flour
  • 1 qt Heavy Cream
  • 2 cups Milk
  • 1 pinch Salt
  • ½ cup Shaved Parmigiano Reggiano

Instructions
 

  • Sauté Butter, Onion and garlic.
  • Add Flour and cook for 2-3 minutes but be careful not to let the roux brown.
  • Add Heavy Cream, Milk, Salt and cook until sauce thickens. Then add Parmigiano Reggiano.
  • Toss with cooked fettuccini (or pour over rice or use as a sauce over chicken).
