Tomato-Florentine Bisque Soup

This is a rich and delicious creamy tomato soup.

Ingredients
  

  • 1 stick Butter
  • 1 Grated Onion
  • 2 cloves Minced Garlic
  • 2-3 cans Crushed Tomatoes (large cans)
  • 1 qt Vegetable Stock
  • 1 lb Baby Spinach
  • 2 cups Heavy Cream

Instructions
 

  • Sauté Butter, Onion and Garlic.
  • When onions are soft add Crushed Tomatoes and simmer for 1 hour.
  • Add Vegetable Stock and Baby Spinach and cook until slightly reduced.
  • Add Heavy Cream and blend with an emulsion blender until creamy.
  • Optional: serve over rice.
