Tomato-Florentine Bisque Soup

Ingredients
- 1 stick Butter
- 1 Grated Onion
- 2 cloves Minced Garlic
- 2-3 cans Crushed Tomatoes (large cans)
- 1 qt Vegetable Stock
- 1 lb Baby Spinach
- 2 cups Heavy Cream
Instructions
- Sauté Butter, Onion and Garlic.
- When onions are soft add Crushed Tomatoes and simmer for 1 hour.
- Add Vegetable Stock and Baby Spinach and cook until slightly reduced.
- Add Heavy Cream and blend with an emulsion blender until creamy.
- Optional: serve over rice.
