Cheese Fondue w/ Apple Slices & Crusty Bread
Fondue was a very popular item in the early and mid 70’s. I remember going to City Island for fondue and dessert as a college student. Fondue is making a comeback and is a great way to entertain family and friends.

Ingredients
- ½ stick Butter
- ¼ cup Finely Minced Onion
- 1 clove Minced Garlic
- 2 tbsp Flour
- 1 cup White Wine
- 3 cups Cheese (I prefer 1 cup Emmental or Swiss, 1 cup sharp cheddar and 1 cup gouda)
- 1 cup Cream
- 4-6 Granny Smith Apples (cored and sliced)
- Baguettes
Instructions
- In a saucepan sauté Butter, Onion and Garlic.
- When onions are soft add Flour and cook for 2 minutes until flour is cooked and slightly golden but not brown.
- Add White Wine and cook for 1 minute until slightly thickened and bubbly.
- Add Cheese and Cream, stir and lower heat. Cook until cheese is smooth and melted.
- Pour into fondue pot and light a small votive candle to keep cheese warm. Some pots are electric and you can prepare and serve the entire dish all in one.
- Slice and core Granny Smith Apples.
- Place baguettes in a basket or tear into smaller pieces.
- If you don't have long fondue forks just use long skewers (easily found in any supermarket).
- Place the fondue pot, apples and bread near your guests and have fun. Serve with chilled white wine.
