Cheese Fondue w/ Apple Slices & Crusty Bread
Fondue was a very popular item in the early and mid 70’s. I remember going to City Island for fondue and dessert as a college student. Fondue is making a comeback and is a great way to entertain family and friends.

- ½ stick Butter
- ¼ cup Finely Minced Onion
- 1 clove Minced Garlic
- 2 tbsp Flour
- 1 cup White Wine
- 3 cups Cheese (I prefer 1 cup Emmental or Swiss, 1 cup sharp cheddar and 1 cup gouda)
- 1 cup Cream
- 4-6 Granny Smith Apples (cored and sliced)
- Baguettes
In a saucepan sauté Butter, Onion and Garlic.
When onions are soft add Flour and cook for 2 minutes until flour is cooked and slightly golden but not brown.
Add White Wine and cook for 1 minute until slightly thickened and bubbly.
Add Cheese and Cream, stir and lower heat. Cook until cheese is smooth and melted.
Pour into fondue pot and light a small votive candle to keep cheese warm. Some pots are electric and you can prepare and serve the entire dish all in one.
Slice and core Granny Smith Apples.
Place baguettes in a basket or tear into smaller pieces.
If you don't have long fondue forks just use long skewers (easily found in any supermarket).
Place the fondue pot, apples and bread near your guests and have fun. Serve with chilled white wine.
