Apple Pie

What’s more all-American than this? It is a must-have for Thanksgiving feasts but is a great anytime dessert that is really easy – the most work is peeling and cutting the apples. I always think of my niece Mary when I make an apple pie since it is one of her favorite desserts.

Ingredients
  

  • Pie Crust (prepared separately)
  • 5-10 lbs Apples (I like to mix a few different ones for texture and flavor - Red Delicious, Granny Smith and Macintosh are my preferred blend)
  • 2 tbsp Lemon Juice
  • ½ cup Sugar
  • 2 tsp Cinnamon (more if you like but don't go overboard)
  • 1 pinch Salt
  • 3-4 tbsp Flour
  • ½ stick Cold Butter (cut into small cubes)
  • 2 tbsp Heavy Cream
  • 1 tbsp Additional Sugar
  • 1 Thin Slice of Additional Butter

Optional Crumb Topping

  • 1 cup Flour
  • ½ cup Oats
  • ½ cup Brown Sugar
  • 3 tbsp Sugar
  • 1 pinch Salt
  • ½ tsp Cinnamon
  • 1 stick Cold Diced Butter
  • Confectioners' Sugar (for dusting)

Instructions
 

  • Prepare Pie Crust and place in baking pan.
  • Wash, peel, core and slice Apples.
  • Place sliced apples in large mixing bowl and add Lemon Juice, Sugar, Cinnamon, Salt, Flour and Cold Butter cut into small cubes. Toss apples well.
  • Place apples in prepared baking pie dish. Cover with top crust and crimp edges.
  • Make a few decorative slices in center of pie (for ventilation) and lightly brush top with Heavy Cream.
  • Lightly dust top with Additional Sugar.
  • Place Thin Slice of Butter on center of pie.
  • Bake 350℉ oven for 55-60 minutes or until crust is golden brown.

Optional Crumb Topping

  • You can top the pie with a crumb topping and keep the extra crust for later use. This crumb topping can also be used for fruit pies or cobblers - for cobblers triple the recipe but only 2 sticks of butter is necessary.
  • Mix together Flour, Oats, Brown Sugar, Sugar, Additional Salt, additional Cinnamon and Cold Diced Butter by hand (you want good big crumbs not fine powder).
  • Crumble topping with clean hands and place on top of pies and bake 350℉ for 50-55 minutes or until bubbly and golden.
  • Let cool and dust with Confectioners' Sugar.
