Beef Satay Skewers w/ Apples

Ingredients
- 1-2 lbs Beef Tenderloin (cut into 1-inch cubes)
- ¼ cup Apple Jack Liquor
- 2 tbsp Olive Oil
- 2 tbsp Sugar
- 1 tsp Salt
- ½ tsp Black Pepper
- ½ tsp Onion Powder
- 2 Apples
- Zest and Juice of One Lemon
- ½ tsp Sugar
Instructions
- Place Beef Cubes in a mixing bowl and add Apple Jack Liquor, Olive Oil, Sugar, Salt, Black Pepper and Onion Powder. Toss and let beef marinate for at least 1 hour.
- Wash and core Apples but do not peel. Cut apples into 1-inch cubes and place in mixing bowl.
- To apples add Lemon Juice, Lemon Zest and Sugar and toss to coat.
- Soak skewers in warm water for 30 minutes. Place 2 beef cubes and 1 apple cube on each skewer.
- Place skewers on a hot lightly oiled grill pan and cook for 1-2 minutes on each side or until brown and cooked.
