Khatte Chane or Chana Masala (Chickpeas in Tamarind Sauce)

Ingredients
- ¼ cup Olive Oil
- 2 Chopped Onions
- 2 cloves Minced Garlic
- 1 can Chickpeas (large can; drained and rinsed)
- 1 can Diced Tomatoes (large)
- 1 can Coconut Milk (not the sweet Coco Lopez type but plain healthy unsweetened coconut milk)
- 2 tbsp Cumin
- 2 tbsp Turmeric
- 4 tbsp Curry Powder
- 3-5 Fresh Basil Leaves
- 1 tsp Salt
- ½ tsp Pepper
Instructions
- In saucepan sauté Olive Oil, Onions and Garlic until onions are soft and translucent.
- Add Chickpeas, Tomatoes, Coconut Milk, Cumin, Turmeric, Curry Powder, Basil Leaves, Salt and Pepper.
- Simmer for at least 1 hour. Taste and adjust seasoning to your taste.
