Khatte Chane or Chana Masala (Chickpeas in Tamarind Sauce)

This recipe is dedicated to Johnny B (my brother from another mother - a loving and loyal friend to me and my entire family)

Ingredients
  

  • ¼ cup Olive Oil
  • 2 Chopped Onions
  • 2 cloves Minced Garlic
  • 1 can Chickpeas (large can; drained and rinsed)
  • 1 can Diced Tomatoes (large)
  • 1 can Coconut Milk (not the sweet Coco Lopez type but plain healthy unsweetened coconut milk)
  • 2 tbsp Cumin
  • 2 tbsp Turmeric
  • 4 tbsp Curry Powder
  • 3-5 Fresh Basil Leaves
  • 1 tsp Salt
  • ½ tsp Pepper

Instructions
 

  • In saucepan sauté Olive Oil, Onions and Garlic until onions are soft and translucent.
  • Add Chickpeas, Tomatoes, Coconut Milk, Cumin, Turmeric, Curry Powder, Basil Leaves, Salt and Pepper.
  • Simmer for at least 1 hour. Taste and adjust seasoning to your taste.
