Green Beans Almondine
This is a classic side to many dishes. Simple and elegant.

Ingredients
- 3 lbs Traditional Green Beans (or use haricot vert - thin French Green Beans)
- 1 tbsp Salt
- ½ tbsp Baking Soda
- 1 stick Butter
- 2 tbsp Olive Oil
- 1 clove Minced Garlic
- 2 Finely Diced Shallots
- ½ cup Slivered or Sliced Almonds
Instructions
- Wash and clean Green Beans (de-string & cut tips).
- Blanch green beans in boiling water for 3 minutes with Salt and Baking Soda. Remove from water and place in ice bath or run under cold water to stop cooking and retain bright green color.
- In sauté pan place Butter, Olive Oil, Garlic and Shallots. Cook until shallots are soft - about 3-4 minutes. Add Almonds and continue to sauté for 1-2 minutes.
- Add cooked beans to sauté pan and toss - cook until beans are heated through - about 3 minutes.
