Green Beans Almondine
This is a classic side to many dishes. Simple and elegant.

- 3 lbs Traditional Green Beans (or use haricot vert - thin French Green Beans)
- 1 tbsp Salt
- ½ tbsp Baking Soda
- 1 stick Butter
- 2 tbsp Olive Oil
- 1 clove Minced Garlic
- 2 Finely Diced Shallots
- ½ cup Slivered or Sliced Almonds
Wash and clean Green Beans (de-string & cut tips).
Blanch green beans in boiling water for 3 minutes with Salt and Baking Soda. Remove from water and place in ice bath or run under cold water to stop cooking and retain bright green color.
In sauté pan place Butter, Olive Oil, Garlic and Shallots. Cook until shallots are soft - about 3-4 minutes. Add Almonds and continue to sauté for 1-2 minutes.
Add cooked beans to sauté pan and toss - cook until beans are heated through - about 3 minutes.
