Green Beans Almondine

This is a classic side to many dishes. Simple and elegant.

Ingredients
  

  • 3 lbs Traditional Green Beans (or use haricot vert - thin French Green Beans)
  • 1 tbsp Salt
  • ½ tbsp Baking Soda
  • 1 stick Butter
  • 2 tbsp Olive Oil
  • 1 clove Minced Garlic
  • 2 Finely Diced Shallots
  • ½ cup Slivered or Sliced Almonds

Instructions
 

  • Wash and clean Green Beans (de-string & cut tips).
  • Blanch green beans in boiling water for 3 minutes with Salt and Baking Soda. Remove from water and place in ice bath or run under cold water to stop cooking and retain bright green color.
  • In sauté pan place Butter, Olive Oil, Garlic and Shallots. Cook until shallots are soft - about 3-4 minutes. Add Almonds and continue to sauté for 1-2 minutes.
  • Add cooked beans to sauté pan and toss - cook until beans are heated through - about 3 minutes.
