Gosht Kabab (Savory Meat Kabobs)

Ingredients
- 2 lbs Tenderloin of Lamb (cut to ½-inch cubes)
- 2 lbs Chicken Thighs
- 2 lbs Large Shrimp
- 1 brick Firm Tofu
- ½ cup Olive Oil
- Zest & Juice of Two Lemons
- 1 tbsp Salt
- 1 tbsp Crushed Black Pepper
- 2 tbsp Curry Powder
- 1 tbsp Cumin
- ⅛ cup White Rice Vinegar
- 2 tbsp Sugar
Instructions
- Trim and cut Lamb, Chicken Thighs and Tofu into ½-inch cubes.
- Make marinade by mixing together Olive Oil, Lemon Zest, Lemon Juice, Salt, Black Pepper, Curry Powder, Cumin, White Rice Vinegar and Sugar.
- Pour marinade over meats and fish and refrigerate for at least 1-2 hours.
- Soak skewers in hot water then place meat, fish and tofu on separate skewers.
- Place on a hot lightly oiled flat grill and cook approximately 2-3 minutes on each side.
