Coconut Beef Brochettes

This is a dish that has a very delicious flavor profile. Don't rush the marinating time.

Ingredients
  

  • 2 lbs Beef (use a nice cut like rib-eye or tenderloin)
  • 3 tbsp Olive Oil
  • 2 tbsp Rice Wine Vinegar
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Turmeric
  • ½ tsp Sugar
  • ½ tsp Ground Ginger
  • 1 cup Coconut Milk

Instructions
 

  • Cut Beef into 1-inch cubes and place cubes into a mixing bowl.
  • Add Olive Oil, Red Wine Vinegar, Salt, Black Pepper, Turmeric, Sugar, Ground Ginger and Coconut Milk. Stir to coat and blend. Refrigerate at least 4 hours to overnight.
  • Soak skewers in warm water for 30 minutes before using.
  • When ready to cook skewer 2-3 pieces on a bamboo skewer for hors d'oeuvres and 5-6 pieces for appetizer/entrée size.
  • Place skewers on a lightly oiled hot grill and cook for 1-2 minutes on each side. Let rest for 3 minutes before serving.
