Coconut Beef Brochettes

Ingredients
- 2 lbs Beef (use a nice cut like rib-eye or tenderloin)
- 3 tbsp Olive Oil
- 2 tbsp Rice Wine Vinegar
- 1 tsp Salt
- ½ tsp Black Pepper
- ½ tsp Turmeric
- ½ tsp Sugar
- ½ tsp Ground Ginger
- 1 cup Coconut Milk
Instructions
- Cut Beef into 1-inch cubes and place cubes into a mixing bowl.
- Add Olive Oil, Red Wine Vinegar, Salt, Black Pepper, Turmeric, Sugar, Ground Ginger and Coconut Milk. Stir to coat and blend. Refrigerate at least 4 hours to overnight.
- Soak skewers in warm water for 30 minutes before using.
- When ready to cook skewer 2-3 pieces on a bamboo skewer for hors d'oeuvres and 5-6 pieces for appetizer/entrée size.
- Place skewers on a lightly oiled hot grill and cook for 1-2 minutes on each side. Let rest for 3 minutes before serving.
